Josef Chromy Pinot Noir is handpicked from the estate vineyard at Relbia in northern Tasmania, where the soils are a mix of alkaline cracking clay and stony neutral brown soil.
Most of the fruit is destemmed and placed into small open fermenters, and around one quarter is added whole bunches. During fermentation, regular pump overs and plunging are used to immerse the skins and gently extract colour and tannin.
After pressing the wine undergoes malolactic fermentation in French oak barrels, followed by eight months of maturation prior to bottling.
Dark red garnet, Josef Chromy Pinot Noir has a fine tannin structure with hints of red fruit, savoury spice and refreshing acidity. Cellaring potential is seven years.
